Strolghino

Typical salami recipe of Parma, it is made with the lean meat trimmings of Culatello. It was traditionally used to forecast the good quality of Culatello (if Strolghino was good, then Culatello would have been good too at the end of its much longer dry-curing period). The name of this salami derives in fact from the word "astrology" (foreseeing the future).
