Dry-cured beef, it is produced from chosen cuts of beef legs, expertly processed with a blend of salt and spices. Finely cut slices are bright red and release a delicate and lightly aromatic fragrance. Very lean, bresaola makes a refined, light dish when dressed with extra-virgin olive oil and lemon.
