Salame Ventricina
Ventricina, a traditional speciality from the Italian region of Abruzzo, is mainly made from lean pork meat. It is a rather coarsely ground salami, cured for at least 3 months. Once sliced, it is compact and soft. Its flavour is strong yet balanced, thanks to a skilful blend of chilli, pepper, aniseed and fennel.
