Pancetta Coppata

This specialty is produced by processing dry-salted pork belly stuffed with rich “coppa” (pork neck). It is hand-tied and briefly seasoned. Finely cut slices are compact, lean and highly flavoured. It serves beautifully with an olive oil, vinegar, salt and pepper dip for fresh vegetables such as delicate white celery.
