This product, typical of the Emilia-Romagna tradition, is obtained by processing pork loins (neck muscles), one of the best pork cuts. Before being tied to create its traditional cylindrical shape, it goes through a skilful processing, with salt and spices, that gives it a finely sweet and delicate flavour. Slices are compact.
