When you have a late evening in the office and get home with no desire to cook but with ravenous hunger, when your imagination is low and you open the fridge and there is nothing that seems good for making a quick dish with a satisfying flavor, if you look well you find a pair of eggs, some sausage, maybe a small potato and a few sprigs of parsley.

Well, you have all the ingredients for a rich omelet that can be prepared in a few minutes. And given the substance of this omelet you can keep a slice for your office lunch next day, or to take to an outdoor picnic. And if you cut the sausage omelet into many thin slices it can become a tasty starter or appetizer with friends at aperitif time.

The Recipe:

  • Cut the sausage and brown it in a non-stick frying pan.
  • When the sausage is cooked remove it from the heat and let it cool down.
  • Beat 4 eggs well in a bowl. The longer you beat them the softer and higher the omelet.
  • Season the eggs with salt and pepper, add the sausage and stir some more with a fork.
     

For this recipe it is very important that the omelet does not stick, so be sure to heat the non-stick frying pan well or first grease it with a drizzle of oil. Pour the mixture into the frying pan and let it cook so you can flip the omelet without problems. Brown the other side of the omelet for a few minutes and then slide the omelet into a beautiful serving dish. Decorate the mild sausage omelet with fresh chopped parsley and serve.

Suggestion: if you don’t have sausage you can use salami, but without browning it in the frying pan. Just add it to the beaten eggs.
