This recipe perfectly reflects the Italian culinary tradition – gnocchi –, served with a special sausage sauce and baked in the oven, guaranteed to be a triumph of flavour when served up.

The Recipe:

  • Finely chop an onion and fry it gently in a pan with some extra virgin olive oil.
  • Now add the contents of the three packets of diced sausage by Negroni and when brown, sprinkle them with 3 spoonfuls of red wine.
  • When the wine has evaporated add the tomato passata, the rosemary and finally check whether your sauce needs any more salt and pepper, which will depend on your personal taste.
  • Leave the sauce to cook for about 15 minutes on a low heat. Once this operation is complete, you can get on with cooking the gnocchi, the star ingredient of this recipe.  
     

Throw the gnocchi into plenty of boiling salted water and, using a slotted spoon, lift them out when they start to float to the surface. Now you can start to assemble your dish for going into the oven, a final step that will make your gnocchi even more delicious. Arrange a layer of sauce on the bottom of an oven dish and, as you gradually strain the gnocchi, place them in the dish to form a layer which you will then cover with another layer of meat sauce and a generous sprinkling of parmesan cheese. Continue in this way until all the gnocchi have been used up. The final layer must consist of sausage meat sauce and plenty of grated cheese. Oven bake for 10 minutes with the grill on. Serve this delicious dish piping hot.
