|4 salmon fillets|
|8 slices of Culatello di Zibello PDO|
|2 cloves of garlic halved|

This is a simple but special salmon dish thanks to Culatello di Zibello PDO. The delicate Culatello di Zibello PDO is wonderful for wrapping the salmon fillets. Serve the salmon and Culatello di Zibello PDO fillets with lentils or sautéed spinach: the perfect dish for your romantic dinner!
Carefully clean the salmon fillets, rinsing them under running water and making sure there are no bones. Wrap each salmon fillet with two slices of Culatello di Zibello PDO.
Place the salmon fillets with Culatello di Zibello PDO spaced evenly on a greased ovenproof dish. Add half a glass of white wine, halved garlic cloves, and lemon wedges. Lightly season the fillets with salt, keeping in mind that the flavor of Culatello di Zibello PDO may already provide enough seasoning. Sprinkle with a little pepper and add the sprigs of thyme.
Bake at 400° F for about half an hour: remember to baste the salmon fillets from time to time with their own cooking juices in order to keep them soft. If the Culatello di Zibello PDO already seems cooked before the salmon fillets have, cover the pan with a sheet of aluminum foil: this will prevent the culatello from burning. When the salmon is cooked serve them on plates or take our idea in the image: create individual parcels using baking paper and close them with some kitchen twine.
Before serving, remember always to baste the fillets with some strained cooking juices after you have removed the fillets from the pan.
